The game doesn't have multiple save slots. So we created separate user accounts, however for each account it wants to install the game again, and with only a 128Gb Quest 3 it says there is not enough space. It seems it doesn't actually take up that much space when you install it again as I tested with smaller apps.

Generally, the developers feel it's unnecessary to the average person to have multiple save files and it can be confusing to some people. The reason you had multiple saves in the past is because you didn't have individual profiles on the old hardware.
